Nordic bread, slow ferment

We bake artisan sourdough the old way: with a living starter, natural fermentation, and patience. Every loaf carries the quiet discipline of time.

Why sourdough

Crafted with intention

Every step of our process is designed to bring out the best flavour and texture in every loaf we bake.

Naturally leavened

Our 5-year-old starter requires only flour, water, and salt. No commercial yeast, no shortcuts. Just wild yeast and lactic acid bacteria doing their work over 18 hours.

Slow fermented

Extended cold fermentation develops complex flavours and makes our bread easier to digest. The crust shatters, the crumb glistens. That’s what patience tastes like.

Locally sourced

We partner with farms across Denmark for organic rye, spelt, and whole wheat. Seasonal additions like Danish cardamom and local seeds rotate through our menu.

Fresh from the oven

Today’s loaves

Baked between 4 a.m. and noon, then available until they sell out. We bake small batches so everything leaves the oven at its peak.
